This delicious cheese comes from the raw milk of the producers of the Bogève cooperative, which are located less than 5 km from the Fruitière.

It can be enjoyed all year round on a platter or as an appetizer. Its dough is soft and airy like the tommes of the past. The name "Charlotte" comes from our local patois nickname given for 4 generations.

We manufacture the tomme all year round. It can be tasted after 2 to 3 months. Contrary to what might suggest its hard and rough crust and its smell of cellar, mold, its taste is soft, tender and delicate. It will be appreciated by everyone, including children.

Appearance: Thick crust, rough brown in colour, flowered with white and yellow patches. Slightly sticky paste, soft ivory to yellow, dotted with small holes. Fruity taste. Smell of cellar

Maturing: from 2 to 3 months.
